Whole Wheat Carrot Bread from A Thought For Food

Whole Wheat Carrot Bread

makes 1 loaf

Ingredients

2/3 cup vegetable oil

2 eggs

1 cup sugar

1 1/2 cups whole wheat flour

3/4 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

2 cups grated carrot

1/2 cup raisins

1/2 cup chocolate chips

Directions

1. Preheat oven to 350 degrees.

2. Grease a 9 x 5 inch loaf pan.

3. In a bowl, whisk together the oil and eggs.

4. In a separate bowl, sift together the sugar, flour, baking soda, salt, cinnamon and nutmeg.  Mix in the oil and eggs.

5. Fold in the grated carrot, raisins, and chocolate chips.

6. Pour mixture into loaf pan. Bake in the oven for 50 minutes, or until a toothpick is inserted and comes out clean.
