Recipe: No Bake Cookies (Gluten-Free)

I am taking a break this week from my Silent Sunday posts to send you all over to my first contribution to the Easy Eats Magazine blog.  Easy Eats is a digital publication that focuses on gluten-free recipes.  Now, you are probably wondering why I, Brian Samuels, would be working with such a magazine when I do not keep a gluten-free diet.  And that’s a very good question.  I’m a bread lover. A pasta lover. A cookie and cake lover. I have no plans of giving up gluten.

BUT (you knew that was coming) eating gluten-free dishes is something I’ve grown to really appreciate, from a culinary standpoint.  First of all, cooking gluten-free  gets you out of your comfort zone.  How often do we rely on pasta as our main entree?  I feel as if we are missing out on opportunities to try other, more creative options.

I’ll be announcing more posts with Easy Eats in the coming weeks, but for now, I hope you enjoy these No Bake Cookies.  These little clusters (I think it’s a more accurate label for these guys) are so darn good and ridiculously easy to prepare.  And, if you have little kids around, they’re a great treat to make with them.  I hope you all enjoy!

I am in the same boat – I love bread and pasta, but love the challenge of baking and cooking gluten-free. Plus, more and more of my friends are not able to tolerate gluten, and it’s always nice to have really good food to serve. I’m looking forward to your recipes.

And, my little ones will be excited about these cookies!

I woke up to gluten free doing an interview for NH magazine on Oonagh Williams. After listening to her and researching, I was blown away at how many people suffer from gluten intolerance. Thank God, I am blessed not to as I am a power artisinal bread and homemade pasta eater. But the truth is, the wheat crops in the US are so engineered…won’t go there. Since that interview, I tried gluten free corn/quinoa pasta found in Whole Foods and actually adore it. Yes, I’ll still make my own bread n pasta, and still thrill to a Poilane, but for many other choices during the day I may switch. Perhaps moderation on my part for my love of all wheat might be a good thing! Nice article! :) )

These cookies look bloody delicious! And I would gladly pull up a seat and share these with you. And congrats on the contribution! Like you, getting in the kitchen and out of your comfort zone is something I appreciate. And GF eating can only help that.

I think part of the fun of blogging is pushing yourself to make things for a wider audience even if they’re not necessarily things you’d make on your own. Gluten-free cooking is one of those such challenging endeavors. Off to go check out these cookies! They sound delicious!

To truly be Gluten Free you have to cook on a dedicated dish that has never been touched with anything containing gluten.

Gluten free baking gets me all in a tizzy, so I’d love to try this no-bake gf cookie. It looks delicious and is perfect for gf beginners!

Congrats on collaborating on such a great project. You know I love gluten…but I also have A LOT of friends that can’t tolerate it. These cookies look scrumptious. But what doesn’t here? I, like you, do not strictly follow a gluten-free diet, but have learned to appreciate making gluten-free stuff whenever I can. I agree that it takes us out of our comfort zone and allows us to try many other flavours! So, I am with you on this one! Thanks for sharing!

Like you, I find working in the gluten free genre really pushes me to think outside the box and work some things out. The textures can be really amazing too when playing with GF goods (almond flour is my favourite thing lately). Plus it feels really good to make a treat that everyone can enjoy. Your cookies sound wonderful, especially the salty pretzel part!
