“Mom, why have we never made a pie?” This had been a question that had nagged at me for a while. The kids at school always bragged about how their moms baked apple pie for Thanksgiving, which they served warm with a dollop of whipped cream. They brought in leftover slices and I drooled over the possibility of getting a bite.
My mom and I baked together frequently when I was a child. Brownies, cookies, pound cakes, peach kuchen. But pies? Never.
“The reason is that pie crust has lard in it,” she explained. “And that lard comes from pigs.”
Growing up in a kosher household, it makes sense why we wouldn’t make pie crust… not if it contained pork fat. This idea lingered with me for a while. In fact, it wasn’t until a year ago that I baked my first pie.
I had learned a long time ago that not all pie crusts contained lard, that they could be made with butter or vegetable shortening. But when you’re told as a child that you can’t make a certain dessert, well, the sentiment stays with you.
Making my first pie, which I did last Thanksgiving, was a proud moment for me. The crust, an old family recipe (on my husband’s side) that contains Crisco and white vinegar, came out perfectly brown on top and flaked beautifully every time I went in for another forkful.
This filling, too, is a revelation. Brown butter anything is a magical thing. But brown butter, apples, sugar, and sage. Tell me if you can think of anything more scrumptious than that.

Sage and Brown Butter Apple Pie
makes a 9″ 2-crust pie
*note: the crust recipe I have does not provide exact instructions. The directions provided below are from my own preparation of the crust.
for the crust
2 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
3/4 cups shortening
6-7 tablespoons water
1/2 teaspoon white vinegar
for the filling
6 medium apples, peeled, cored, and sliced thinly
5 tablespoons butter
5-6 sage leaves, sliced into thin strips
3/4 cup sugar
1/2 teaspoon salt
2 tablespoons flour
additional ingredients
1/4 cup milk or heavy cream
Mix together all of the dry ingredients. Place in the bowl of a food processor. Add the shortening, 6 tablespoons of water (you can add more if needed), and white vinegar and pulse until combined with dry ingredients.
Scoop dough out of the bowl and transfer to a lightly floured work surface. Fold dough into itself about 10 times and then mold into a ball. Wrap with plastic wrap and let sit for three hours.
Preheat the oven to 450 degrees. Take the dough out and, on a lightly floured work surface, roll half of it out to 10 or 11 inches around. Transfer the dough to the pie plate by rolling the dough around the rolling pin and then unrolling it out onto the plate. Using your hands, gently press the dough into the plate so that it is covering all of the crevices.
Roll out the rest of the dough into a circle and let sit while you prepare the filling.
In a pan, melt the butter over medium-high heat and cook until it begins to brown, making sure that it doesn’t burn.
In a large bowl, mix together the apples, sugar, salt, and flour. Coat the apples with the brown butter. Add the sage and toss together.
Transfer the mixture to the pie plate. Using the same rolling method, transfer the top of the pie crust to the pie plate and cover the apple mixture. Press together the edges of the crust and brush with a little milk or heavy cream to make sure they stick together.
Cut three or four slits into the top of the pie. Brush some more milk or some heavy cream on top and sprinkle with granulated sugar.
Bake for 15 minutes, then rotate the pie and turn the temperature down to 350 and bake for an additional 30 to 35 minutes, or until the top becomes slightly brown.
Serve with a dollop of fresh, unsweetened whipped cream and a sage leaf.

I am all about apple pies, and sadly I have to say I never thought of brown butter or for that matter sage. What a wonderful combination of flavors, and I’m sure that pie crust was perfect, I also use a little vinegar in my crusts, I’m not really sure why, but it works!
I know how much our mothers can impact our lives, I think the fact that my Mom really didn’t like to cook worked just the opposite for me, I loved to eat cooking just came naturally.

My mum and I liked to cook together too, but never tackled pies – simply because we were both crust-challenged (I still am). Brown butter, sage and apples – really, Brian, I can’t think of a better combination.

Oh, my! Everything looks wonderful, and I’d love to have the syrups to use. But I can tell you that those Whole Grain Lady Birds would be devoured within minutes of arrival.

I am DEFINITELY psyched to try the ginger syrup from Morris Kitchen. Coming from an Indian household, ginger is abundant in our savoury dishes. This syrup would be an amazing way to infuse my favourite flavour into something a bit sweeter. I can definitely forsee drizzling a touch of this on some vanilla bean ice cream, and better yet, as a sweetener for my chai!

That ginger syrup sounds phenominal. We have pancake day here every Saturday and I would love to pour that on a pile of warm pancakes. I bet it would be good mixed with some of the blueberry syrup I made this summer.
You had me at sage & apples in a pie. I’ve not actually done that, although that flavor combo shows up elsewhere in my kitchen!
Pie crust is an interesting animal. I’ve been making pies for a long time, and have fleeting memories of the 300 or so we made in 2004 & 2005 for a cancer fundraiser!
I did a series of experiments in January (in the blog of course) before a local pie competition and learned a few things. Lard crusts are great, if of course you eat lard, but only for savory pies, not sweet ones. A combination of butter and shortening is my favorite, and all butter crusts don’t work well. All shortening are much more common and seem to work ok, but to me lack flavor.
I also learned from the winners of the competition that cooking your apples before making the pie is a key to it being cooked well in side when you can only see how well it is cooked outside in the final stage. With that knowledge I’ll be back in 2012 to try again for some apple pie cred!
Oh, and your pies are always going to be prettier than mine. But you know me and I’m figuring that isn’t a news story.

That box is full of yummy fall yumminess! For sure, the #1 thing on my list in there is that amazing-sounding maple syrup (I checked with the roomie, and he agrees. A rarity!). A quality maple syrup is a special treat, indeed — a really delicious syrup so far outpaces it’s supermarket counterparts that it’s worthy of the #1 box ranking in my house.

There is no choosing. I want this pie as a first course, a spoonful of that maple syrup, stir some ginger syrup into tea, dunk in a lady bird cookie…followed up by that pumpkin filled brownie and a chocolate gingersnap. My birthday is next week and this is what I’m wishing for.

What a wonderful box! I think I would love the cookies since ginger snaps and chocolate are two of my favorite things. But what really intreges me is the Ginger syrup. I was thinking wouldn’t it be wnderful to use it to make ice cream and serve it with the cookies. You could really dress up, cottage cheese with a drizzle, or punch up hot cocoa. The most delectable item in the box? Absolutely the ginger syrup…. I recently watched Chef Jamie Oliver’s show on strawberries….He trimmed the tops off strawberries then lined them up (top down) in a casserole, drizzled them with vanilla bean infused ginger syrup, heated them for 3 minutes under the broiler and finally served them up with ice cream and crushed shortbread cookies. This box has a great start on this little feast….if only you could include Jamie…then it would be perfect!!

I would love to try that maple syrup in the gift box. Growing up as an American in Europe, maple syrup was one of the things we did without, and so when we found an inn owned by a Canadian couple in the Ardennes in Belgium, it was so exciting to taste real maple syrup again. That rare taste is one of the things I remember well from my childhood. So, in my mind, maple syrup is one of those things that deserves to arrive packaged in a beautiful bottle, and tucked in a wooden box like a treasure.

Since we are in winter already here almost 300 days of rain, and now they say (meterologists) a brutal winter of ice, snow and maybe a big storm that will be the most recorded snow..I am definitely excited about the Maple Syrup, it will go on all my pancakes and waffles I can make with this grill I have outside our home in the patio when the electricity goes out..we would have food and it will be hot, with no electricity in our home the Maple Syrup will taste fabulous! I May already be too late to the party but just stumbled upon your site. GINGER SYRUP!! Although everything else looks especially tasty, the ginger syrup would force me to become creative on my own…something I’m usually scared of doing.
I have been dying to see this post since you mentioned baking this pie on twitter. This pie sounds like it was long worth the wait (though, I can see there being some residual childhood apprehension – I totally get that!). My father has made the same apple pie for years, and everyone claims it to the be the best. I don’t want to make the best apple pie – because I will never be able to make one just like his. So, it’s time for me to start looking at new recipes.
The ginger syrup sounds rather interesting looking at the box. Though the packaging on everything is beautiful and incising.

I see I’m late for the giveaway but wanted to comment anyway since I just discovered your blog; Googled for recipes with apple and sage, since I suddenly have an abundance of both! This pie looks amazing and appears to be worthy of my first pie from scratch, which I think I’ll make this weekend.
Those gift boxes are super cute! The ginger syrup in the fall box would be my pick, as I’m currently expecting my first baby and having lots of fun with syrups and other flavorings to make water more exciting to drink

You had me at brown butter! I’ve never thought of adding sage to an apple pie, but 1) I love the look of the sage on top of the crust and 2) I love sage. Beautiful!
